PORK SHOULDER RUB

Guest post written by my buddy Royce Heath

I was watching Rachel Ray this morning on direct.TV. She showed a really great recipe that I think that I am going to fix this weekend when my parents are in town. It was something that I had never even thought about cooking. It was a pork shoulder. I have cooked all types of pork, but didn’t even know if I could buy a pork shoulder at the local grocery. Anyway, you rub the pork with kosher salt, garlic salt, clove, parsley and pepper. You brown it on the stove top. Then you cook it for six hours in the oven. When you pull it out, the juices have run clear in the dutch oven and the meat is cooked perfectly. She suggested that you serve it pears, apples, and parsnip that has been slow cooking for an hour in another pot. I am excited about cooking it. I think that it is going to be a real hit. I love feeling like an accomplished cook. Cooking for friends and family is my favorite thing to do!
